Paleo Apple Muffins

I’m a Pinterest scroller. I love Pinterest. In reality, I’m more of an Amazon Prime kinda mama but Pinterest let’s me pin all these wonderfully creative things and makes me feel like I might actually do them. That’s where I found this AMAZING recipe. And you wanna know something else about Paleo (probably just as good as the whole healthy thing)? It’s mostly just throw everything in a food processor and go. It’s not overly complicated and there’s not a bajillion steps to a recipe. Because ain’t nobody got time for that. Am I right?

Paleo Apple Cinnamon Muffins
1/2 Cup coconut flour
1 1/2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
4 eggs
1/4 Cup ghee (melted and cooled) OR grassfed butter
1/2 Cup full fat coconut milk (like the kind that comes in a can)
1/4 honey
2 tsp vanilla extract
1 tsp apple cider vinegar
Mix ALL of the above in a food processor. Pulse until combined. Scrape down the sides.

Peel and finely dice one medium apple (I used Honeycrisp). The sweeter the apple the sweeter the muffins. Add into mixture above and stir to combine.

The original recipe says to use parchment paper muffin/cupcake liners (cooking without gluten tends to make things stickier so these will stick to the sides of regular muffin liner. Messy and no fun). I didn’t have any of these particular liners so I just sprayed my muffin tin with PAM non stick cooking spray. I filled mine til basically full and had no issue (they don’t “rise” too much”).

Bake at 350 degrees for 25-30 min (until the tops are solid and spring back when touched).
